Recipe for 25 l batch
Mash 14 kg of plums (it is recommended to peel the fruit). Make a hot sugar syrup with 9 l of water and 5 kg of sugar. Pour this over the plums. Once everything has cooled to 25-30°C, add the contents of the bag and mix thoroughly. Then leave the batch to ferment for about 2 weeks, stirring every other day. For a higher alcohol content, add 1,5 kg of sugar after 5 days. Then filter the batch. Fermentation is quite turbulent.
