APPLICATIONS

The procyanidinic tannins obtained mainly from grapes, makes Top-Tan SR a good choice for important red wines.

These chemical properties allows Top-Tan SR to obtain a wine more structured, and binding with the polysaccharides lead to a richer and more complex and balanced mouthfeel.

Top-Tan SR plays an important role in the colour stabilisation as well. The main effect is accelerating the reaction of free anthocyanins binding.

Top-Tan SR can be applied to improve wine character and complexity during ageing or even before bottling. Its properties make it very important particularly in red grapes too little or too much ripe or when the maceration process has not been optimally managed.

So Top-Tan SR can be used during the skin contact at the higher rates to protect or binding the anthocyanins, and integrating the natural polyphenols content.

RATES AND USE

50– 200 ppm (5-20 g/hl) in red wines, during ageing or before bottling. Use higher rates to integrate polyphenol content in unbalanced wines (not perfect maturity, difficulties during maceration).

To obtain the request result it’s advisable to organise some laboratory trials at different rates. Taste the results better after 7-10 days.

During skin contact use rates from 100 to 250 ppm (10- 25 g/hl) in 2 or 3 additions. Preferably the product is dissolved in water or clean wine and is to be added to the mass with thorough mixing.
