Protects and stabilizes the colour in red musts

APPLICATION

Tanniferm is an ellagic and proanthocyanidic tannins mix. Thank to its composition, this product can be used since the beginning of vinification, just after the crusher, in order to preserve anthocyane molecules to oxidative reactions.

Ellagic tannins carry out their protective action through two different ways:

  • they catch the oxygen molecules making them unavailable to react with anthocyanes,
  • they inhibit oxidative enzymes, like laccase and polyphenoloxidase, that are responsible of quick colour decrease mostly in grapes affected by rot.

Proanthocyanidic tannins improve ellagic tannins action and are directly involved in anthocyanes stabilisation reactions. Using Tanniferm Flash, wines more important and with higher phenolic and colour stability can be obtained. Tanniferm Flash enhances both colour and mouth feel of final wine.

DOSES AND INSTRUCTIONS FOR USE

For grapes affected by rot: 20-60 g/100 kg During maceration and fermentation: from 200 ppm Grape: disperse Tanniferm Flash directly on grapes. Must: dissolve Tanniferm Flash in few water and add to the must.

PACKAGING

0.5 kg and 12.5 kg bags.

STORAGE

Store the product in its original packing, in dry and cool conditions.
