APPLICATIONS

Tannex Flash is used during red wine fermentation. The addition of Tannex Flash during tank filling will ensure the stabilisation of free antocyanins likely to be subjected to oxidative reactions and subsequent precipitation. The end result is better colour stability. In red wine making Tannex Flash gives good extraction, keeping the colour stable maintaining colour, hue and density.

In white wine making, Tannex Flash plays a protective effect against oxidative effects of polyphenol oxidase. The addition of Tannex Flash during grapes picking, crushing, pressing or directly in the juice, will ensure the oxidative protection especially when processing mouldy grapes.

RATES AND USE

  • Red wines, during maceration and fermentation: 100-200 ppm (10-20 g/100 kg).
  • White wines, at tank filling an during fermentation: 30-100 ppm (3-10 g/100 kg).
  • For rot affected grapes: 200-300 (20-30 g/100 kg).

PACKAGING

0,5 kg flacons and 12,5 bags. Keep in cool and dry place in its own packaging well closed.
