APPLICATIONS
Tannirouge Flash is a reddish tannin, obtained from the best “quebracho” wood. Regarding the composition, quebracho tannin has mainly a “procyanidin” structure. This characteristic it’s very important and allows Tannirouge Flash to work in two ways. First of all it’s able to bind the wine free antocyanins and stabilize them, preventing colour loss during red wine ageing, fining and stabilization. Under the colour stabilisation point of view also the little percentage of ellagic tannin (that quebracho wood has in his structure) acts an important role. In fact, as the scientists have tested, this kind of molecules have the role to stimulate the reactions of anthocyanins and tannins bindings.
Besides the addition of Tannirouge Flash gives higher structure, body, improvement of the mouthfeel affecting as little as it’s possible the astringency of wine. To obtain the request result it’s advisable to organise some laboratory trials at different rates. Taste the results better after 7-10 days.
RATES AND USE
Rates can vary from 50 to 200 ppm (5 to 20 g/hl) according to the kind of wine and of the conditions of the grapes from which wine has been produced. The lowest dosage is recommended for wines obtained from perfectly healthy grapes; the highest dosage may be necessary for wines coming from grapes of lower quality. The addition can be made right after the end of the maceration, before racking, fining or even before ageing for important wines. Tannirouge Flash is granule instantly soluble and has to be previously dissolved in water or clean wine and is to be added to the mass with thorough mixing.
