Metatartaric acid with a high esterification index
First created in Italy in 1967 by DAL CIN SPA Super-40 is a pale yellow highly soluble metatartaric acid, having no off odour, with an esterification index higher than 40 at time of manufacture. The esterification index is a measure of the product activity and should be around 40 or higher to maximise the inhibition of potassium bi tartrate crystal formation. It is also effective against calcium tartrates precipitation. It is highly soluble and easy to use.
Super-40 is produced under a vacuum process that avoid the "burning" phenomena which causes off flavours and lack of activity of the product. The result of this vacuum processing is a metatartaric acid, with a 99% purity and an esterification index higher than 40.
DOSES AND INSTRUCTIONS FOR USE
100 ppm (10 g/hl) to be dissolved into a small quantity of water or wine at room temperature. It is then added to the wine to be treated, stirring well. It is advisable to add the product during the pre-bottling phase or immediately before the last filtration. The metatartaric acid (like any other crystal inhibitor) sometimes tends to produce unstable colloids especially in young protein unstable white wines. In this case, treatment with a good bentonite (TOP-GRAN DC) is suggested before adding metatartaric acid. Gommarabica DC must be slowly poured directly into wine, stirring well.
